On the farm, the cows are out on the meadow for the first time after a long winter. They can now enjoy the fresh grass. Their diet will be changing: the cows will go from a corn-silage base to a grass-grazed base. The products made on the farm will also change. We’ll be switching from a white butter to a yellow butter over a 4-week period. It’s the beta-carotene in the grass that changes the butter’s texture, color and taste.
