Emilie, Séverine, Valentin and Antoine make dairy products from cow’s, goat’s and ewe’s milk. Most of the milk comes from Emilie and Valentin’s farm, which has 60 ewes, 30 goats and 20 dairy cows, in Herbinghen near Licques.
Additional cow’s and goat’s milk comes from selected farmers to ensure the quality of our cheese all year round. Most of our production is destined for cheese-making: tommes, pâtes fleuries, etc.
